Sloppy Joe Tater Tot Casserole
Set oven 350F
Brown 1 pound ground beef with diced onion and green pepper, as much as you have or like. Drain. Season with garlic salt and pepper.
Mix in can or jar of sloppy joe sauce*, 4 oz of Velveeta diced, and 4 T cream cheese. Cook and stir until sauce is warm and cheeses melt. Pour meat and cheese mixture into baking dish, whatever you have or like. I use a fudge pan, 7x11 inches. *You might not need the whole container of sauce, depending on how moist you want your meat mixture.
Top meat cheese mixture with a can of corn*, drained, and a layer of shredded cheese. Add a layer of tater tots. I place my tots in rows so portions will scoop easily. *You can skip the corn or swap it out for another vegetable like green beans or peas. In place of canned veggies, you could cook a steamable bag of frozen veggies in the microwave and use them.
Bake 25-35 minutes, depending on your oven and size of pan, also how moist your meat mixture is, and until tater tots are golden and crispy. I turn off the oven, sprinkle more cheese on top, and set the dish back into the oven for a few minutes until top cheese is melted. This is real comfort food.
