Grandma's Cucumbers and Onions
I will give you the basic recipe,and you can tweak it to suit your taste. I learned to make this from my husband's Iowa grandma when we first visited there soon after we were married better than 50 years ago.
*2 medium cucumbers (I take the ends off and use a vegetable peeler to peel off strips of skin, leaving some narrow green stripes all around. I cut each in half the long way and scoop out the seeds with a spoon. Then I slice thin crosswise, so I end up with little "c" shape pieces. Some people leave the skin on, the seeds in, and just slice that way. That is up to you.)
*1 onion (The size is up to you depending on how fond of onion you are. The cut is up to how big a piece of onion you want to bite into. I use a large onion and do a medium chop.)
*salt (The original recipe says 1-1/2 teaspoons. I use 1 teaspoon.)
*2 Tablespoons vinegar (I use white vinegar, but you can use what you like.)
*1 Tablespoon sugar (This depends on how tangy you like your salad. Some use none.)
*sour cream (Spoon in some and mix, adding more until you get the texture you like.)
* other additions (Some people add dill or even chopped tomato. It all depends on what you like or have on hand.)
You can eat right away, but I usually try to chill a couple hours. Enjoy!
