Gloria's Enchiladas
I cook a pound of ground beef with onions, peppers, taco seasoning and some salsa. Spray 9x13 pan. In each of 10 tortillas I put a slice of pepper jack cheese and a couple spoons of refried beans along with the meat. Pour a can of enchilada sauce over and cover with cheese. Bake 20-25 minutes at 375 but kind of watch them at the end. Let set for 10 minutes. You can adjust the spiciness by the hotness of the salsa and sauce you use. Enjoy!
